🍳 Egg dinner revisited - 3 ideas that don't scramble

Tired of the usual scrambled eggs but only have eggs at home?

In this post, I'll show you 3 simple but powerful ideas that even beginners can make - in 30 minutes, without any kitchen drama.

🥘 1. Egg fried rice with leftovers

Time: about 15 minutes
What is it good for? If you have leftover cooked rice in the fridge.

Ingredients (2 servings):

  • 2 eggs

  • 2 cups of cooked rice

  • 1 small head of onion

  • 1 clove garlic

  • 1 tablespoon of oil

  • Soy sauce or salt and pepper to taste

  • (Optional: frozen vegetable mix or chopped peppers, spring onions)

Preparation:

  1. Heat the oil in a pan.

  2. Fry the onion and add the garlic.

  3. Add the rice, stir through.

  4. Beat in the eggs and mix quickly until the eggs are cooked.

  5. Season, season - done!

Tip: It is particularly delicious with a few sesame seeds or spring onions.

🍳 2. Shakshuka - the Middle Eastern egg tomato

Time: about 20-25 minutes
What is it good for? If you're looking for something more exciting but still simple.

Ingredients:

  • 3 eggs

  • 1 can canned chopped tomatoes (or fresh tomatoes)

  • 1 small head of onion

  • 1 clove garlic

  • 1 teaspoon smoked paprika

  • 1 teaspoon cumin

  • Salt, pepper

  • 1 tablespoon olive oil

  • (Optional: feta cheese, parsley on top)

Preparation:

  1. Fry the chopped onion and garlic in the oil.

  2. Add the spices and then the tomatoes.

  3. Cook to a thick sauce consistency (about 10 minutes).

  4. Beat in the eggs, one at a time, cover and cook for 5-7 minutes, until the whites are set and the yolks are creamy.

Serving: Delicious dipped in bread!

🧀 3. Egg and cheese muffin bites

Time: approx. 25 minutes (including baking)
What is it good for? If you're looking for something to make ahead of time or as a guest desserts.

Ingredients (6 pieces):

  • 3 eggs

  • 4 tablespoons of milk

  • 50 g grated cheese

  • Salt, pepper

  • Muffin tin (silicone or paper cupcake tin)

  • (Optional: chopped ham, peppers, spinach, zucchini)

Preparation:

  1. Preheat the oven to 180 °C.

  2. Mix the eggs, milk, cheese and spices.

  3. Put the mixture into the muffin tins, max 2/3 of the way up.

  4. Bake for about 15-18 minutes, until nicely risen and golden brown.

Tip: Delicious hot or cold - it will keep in the fridge for up to 2 days.
